21 DAYS: WEEKEND EATS

The weekend's here! Kind of feel like you've been eating the same thing over and over? Mix up your meals with these two new recipes! 

Organic Rolled Oats

A perfect breakfast with all the works! 

WHAT YOU'LL NEED: 2 cups of raw almond milk, 1 cup organic rolled oats, 1-2 tablespoons raw peanut butter. 1 teaspoon chia seeds. 2 tablespoons roasted pistachios (whole)

Step One: Boil Almond Milk

Step Two: Add Oats 

Step Three: Reduce heat, stir occasionally, let simmer 5-6 minutes

Step Four: Cover and take off heat

Step Five: Let stand for 2-3 minutes

Step Six: Stir in Peanut Butter

Step Seven: Serve in bowl and garnish with Chia seeds and pistachios 

 

THE ROOTS 

This is a great, easy meal to make and hearty too! 

WHAT YOU'LL NEED: Sweet Potato, Brussel Sprouts, Carrots, Coconut Oil, Sea Salt 

Step One: Preheat oven to 365* 

Step Two: Rinse Vegetables

Step Three: Peel the Sweet Potato and Carrots

Step Four: Dice the Sweet Potato

Step Five: Toss all vegetables in coconut oil

Step Six: Season with salt

Step Seven: Bake for 20-25 minutes or until tender
